Nutrient Loaded Porridge

Prep notes: Soak Porridge with Seeds in 1/2 Cup of Water overnight using a saucepan

Cooking time: 5 – 15 minutes

Yield: 2 Servings

This is my go to breakfast most days. It’s easy to make, contains a good portion of omega 3 Essential Fatty Acids, Proteins and Complex Carbohydrates. It’s healthy and should keep all but the most ravenous going until lunch.

Nutrient Dense Porridge - Ready to Eat

Ingredients:

  • Porridge – 2 cups (I prefer Flahavans Jumbo Oats)
  • Seeds – Pumpkin or Sunflower – 1 Tbsp. per serving
  • Milk – Plant based or whatever you prefer to use. Add just enough to get the desired consistency of the porridge
  • Udo’s Oil or Flax / Hemp Oil – 1 or 2 Tbsps. per serving
  • Optional extras:
  • Strawberries / Blueberries – washed and chopped
  • Replace the Pumpkin / Sunflower seeds with Hemp Seeds (use shelled not the whole hemp seed) for more Omega 3’s
  • A dash of cinnamon for added flavour

Instructions:

After soaking, drain and rinse the Porridge and Seeds using a sieve.

Return the Porridge to saucepan and add 1/4 Cup of water.

Heat on medium heat for 5 – 10 minutes. Stir regularly until the Porridge reaches desired consistency.

Remove from heat and place Porridge in a bowl.

Add Berries, Cinnamon, 2 Dessert Spoons of Oil and Milk.

Stir well and enjoy!
